Paul O’Connor is among Ireland’s top chefs featured in the renowned “Chefs of Distinction Recipe Book” which features dishes from some the UK and Ireland’s finest hotels.
Originally from Farranfore, Co. Kerry, Paul began his career in catering working at the Inchydoney Lodge & Spa where his first role was commis chef. He then moved on to work in Sheen Falls Lodge in Kenmare and progressed to the role of Head Chef.
In 2004, Paul travelled to Australia where he pursued his culinary career and became Sous Chef in the prestigious Sydney Opera House.
Paul returned to Co. Kerry in 2007 to work as the Head Chef in the 4star Lake Hotel in Killarney. Paul worked at the Lake House for six years and during his time as Head Chef, the Hotel was awarded its first ever AA Rosette.
In 2017, Paul was appointed Head Chef at the Herbert Restaurant in Cahernane and shortly after Paul’s appointment, the 4star restaurant was awarded 2 AA Rosettes.
